					<description>My mother disagrees somewhat with the quantities I've set forth here. It's true that my stuffing is, to borrow a wine term (though it's used in regard to fruit), more &quot;meat-forward&quot; than hers. She uses two eggs but roughly doubles the amounts of stock, bread crumbs, and cheese. Start with my quantities, and if you want a mellower, breadier flavor, work your way up to hers.</description>
